Я уже как-то писала рецепт приготовления в материалах по введению прикорма, но повторюсь нагляднее, с фотографиями.
Собственно это простейший способ утилизации кефира или простокваши. Всего-то нужно нагреть и процедить.

Из 2,4 литра детского кефира 1,5%-й жирности у меня вышел вот такой колобок достаточного тугого творога.

Кефир я слила в стеклянную посуду, подходящую для микроволновой печи, отправила на полную мощность на 10 минут, затем помешала и снова на 5 минут, затем ещё раз помешала и окончательно ещё на 5 минут. Т.е. всего 10+5+5 минут. Затем просто процедила через марлю, отвесила на полтора часа над раковиной.

Творог готов, но если необходимо его сделать суше, то можно положить под пресс. Свой я держала ночь под прессом из 3 литров воды. Просто взяла кастрюльку, положила на дно перевернутое блюдце, сверху марлевый узелок с творогом, затем снова блюдце, и уже сверху груз. Оставила на ночь на холодном подоконнике. Утром переложила из марли в стеклянную посуду и отправила в холодильник.

Творог получается совершенно не кислым, но кислоту набирает уже в течение первых суток.  

Если в хозяйстве отсутствует микроволновая печь, то кефир можно нагреть в эмалированной посуде на плите до отделения сыворотки. Летом я бы довела до кипения на всякий случай.

That's amazing! Goat milk kefir! Never tried :) There is might be wonderful cheese made from it :)
And coconut kefir - it is something Marsian :) I'd like to try it so much :)

I can't remember if I tried goat milk. The problem is that I dislike raw milk just from the cow or goat, only boiled or pasteurized. I like goat cheeses very much but there is lack of them in our place.

Smoothie sounds delicious :)

There is a problem for me to buy raw milk, because I can't trust anyone before I'l see that caw and the place where it feeds. We went to Kiev last summer the car (500km) and all our way longed we had seen cows and goats on both sides of the road. It means that they ate that dirty grass, do you understand what I tried to explaine? So when I go to the market I afraid to buy that milk :)

It's prohibited to sell raw milk and produce cheeses from raw milk in Ukraine. But imported cheeses from raw milk are still in the our market, very expensive but we can efford them sometimes. I like goat cheeses very and very much and I am sure I will enjoy that cheese you've shown me, but I doubt if I can find it in my place.
I always make feast for myself whenn I am abroad: buy as many cheeses as I want to eat XDDD

As for raw milk - it was torture for me when I was 10 years old. :D My mother made me to drink it, because of my rehabilitation period after illness. We had rest in the village that summer and there was a caw in the neibourhood. So everyone run to that yard with the cup 3 time a day with the smile except of me, I dragged myself with tears on my eyes XD I filled my mouth with huge ammount of sweet bread and then made small sip of raw milk in order not to feel its taste XD Can you imagine how unhappy I felt myself XD Brrrrrr ... XD Horrible experience XD But another matter entirely with pasteurized or sterilized milk, I like it so much but no can only put small amount into the coffee. My stomach can only get sour milk such as yogurt or kefir, etc. :)

It's so helpful to have such place close to home. Just looked at their cheeses ..... OMG .... I have a glass of Rose in my hand now and my other hand tried to touch those cheeses at the screen :D
