Are you the cheese freak as I am?

cheese_party so much. I am very sorry but my English is not as good as I want it to be, so I can't describe my love to cheeses as graphically as he do it.
But I will try to do it if public don't mind.
My friends always amazing how could I buy so many kind of cheeses at the same time but they just should take a look at Maitre Fromager's collection :)
The problem is that there is not such cheese culture in here like in France, or Italy, etc.
Moreover it was a deficiency in my country and in my city 15-20 years ago. Today I've read that our country is the most cheese productive in the Europe, strange but they wrote that there are 200 cheese factories here. One problem - elite cheeses are still inaccessible for majority. They are only from abroad and prices are very impressive.
Last week I focus my attention on Swiss cheeses such as Kazerai Grutener and Margot. First was pretty nice but the second has more sweet and more bright taste very close to Grana Paddano in his sweetness and fruitness if I could say so but of course not so hard and crumbly.
As for local cheeses - Swiss Delicacy, Golden Amstel, Fitness and many other were tested. I've only could say that soft cheeses like Gouda, Edam, etc. are pretty nice here but harder cheeses, ripe or mature cheeses are still leaving much to be desired. I presume they have no patience to give them to ripen properly. They are sometimes nice but imported are pinning them down in no time at all.
But I am glad that local cheeses are becoming better and better every day.
Just taken a look into my fridge. Crisis. Only 8 sorts home. And 2 in the office. Two weeks ago here were 11 and three or four at work. A couple were thrown to the bin because of unusual mold. Will try to make a photo of available.
